    • 1/2 pound lean ground beef
    • 1 medium onion, chopped (1/2 cup)
    • 1 (15 to 16 ounce) can kidney beans, rinsed and drained
    • 1 (10 ounce) can enchilada sauce
    • 1 (6 1/2 ounce) pouch Betty Crocker golden corn muffin and bread mix
    • 1/3 cup skim milk
    • 2 tablespoons light margarine
    • 1/4 cup eggbeaters
    • 1/2 cup sargento light shredded mexican cheese
    • 1 (4 ounce) can chopped green chiles, undrained
    • 1/4 cup sour cream
    • 4 medium green onions, chopped (1/4 cup)


    Instructions


    1. Cook beef and onion in a 12" nonstick skillet over medium heat about 5 minutes, stirring occasionally until beef is browned; drain. Stir in beans and enchilada sauce.
    2. Place beef mixture in a 3 1/2 to 4 1/2 quart crockpot.
    3. Stir cornbread mix, milk, margarine and eggbeaters just until moistened (batter will be lumpy).
    4. Stir cheese and chiles into batter.
    5. Spoon over beef mixture in crockpot.
    6. Cover and cook on low setting 5 to 6 hours, or until a toothpick inserted in center of cornbread comes out clean.
    7. Serve with sour cream and green onions.
