- 1/2 pound lean ground beef
- 1 medium onion, chopped (1/2 cup)
- 1 (15 to 16 ounce) can kidney beans, rinsed and drained
- 1 (10 ounce) can enchilada sauce
- 1 (6 1/2 ounce) pouch Betty Crocker golden corn muffin and bread mix
- 1/3 cup skim milk
- 2 tablespoons light margarine
- 1/4 cup eggbeaters
- 1/2 cup sargento light shredded mexican cheese
- 1 (4 ounce) can chopped green chiles, undrained
- 1/4 cup sour cream
- 4 medium green onions, chopped (1/4 cup)
Instructions
- Cook beef and onion in a 12" nonstick skillet over medium heat about 5 minutes, stirring occasionally until beef is browned; drain. Stir in beans and enchilada sauce.
- Place beef mixture in a 3 1/2 to 4 1/2 quart crockpot.
- Stir cornbread mix, milk, margarine and eggbeaters just until moistened (batter will be lumpy).
- Stir cheese and chiles into batter.
- Spoon over beef mixture in crockpot.
- Cover and cook on low setting 5 to 6 hours, or until a toothpick inserted in center of cornbread comes out clean.
- Serve with sour cream and green onions.
