Tangy Pork Chops

- 4 pork chops 1/2" thick
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 medium onions chopped
- 2 celery ribs chopped
- 1 large green pepper chopped
- 1 (14 1/2 ounce ) can stewed tomatoes
- 1/2 cup ketchup
- 2 tablespoons cider vinegar
- 2 tablespoons brown sugar
- 2 tablespoons worcestershire sauce
- 1 tablespoon lemon juice
- 1 beef bouillon cube
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions
- Place pork chops in a slow cooker.
- Sprinkle with salt and pepper.
- Add onions, celery, green pepper and tomatoes.
- Combine ketchup, vinegar, brown sugar, worcestershire sauce, lemon juice and bouillon.
- Pour over vegetables.
- Cover and cook on low 5 to 6 hours.
- Mix cornstarch and water.
- Stir into liquid in slow cooker.
- Cover and cook on high 30 minutes or until thick.
- Serve over rice if desired.
- 4 servings at 5 points each (excluding rice).
Final Comments
Substitute 6 boneless skinless chicken breasts halves for the pork and let it cook 6 to 8 hours, it seems like you get about 8 servings, especially when it cooks down and the chicken falls apart.
