- 12 ounces boneless beef round steak
- 2 tablespoons all-purpose flour
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 (14 1/2 ounce) can italian stewed tomatoes
- 1 cup carrots
- 1/2 cup zucchini
- 2 tablespoons water
- cooking spray
Instructions
- Spray a large unheated skillet with cooking spray.
- Trim fat from meat.
- Cut meat into 4 serving pieces.
- Combine flour, pepper and garlic powder.
- Using the notched side of a meat mallet, pound flour mixture into meat on both sides.
- Preheat skillet over medium heat and brown meat on both sides.
- Transfer meat to a 2-quart baking dish.
- Combine stewed tomatoes, carrots, zucchini and water and pour over meat.
- Cover the dish with foil.
- Bake in a 350 degree oven for 1 1/2 hours or until meat is tender.
- Makes 4 servings at 182 calories each.
