Beef: Country Fried Steak And Gravy

- 3/4 cup flour
- 1/4 cup cornmeal
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 beef cube steaks
- 2 eggs
- 2 tablespoons milk
- 2 to 4 tablespoons oil
- Gravy:
- 1 tablespoons pan drippings
- 2 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon beef bouillon granules
- Dash of salt and pepper
Instructions
- Combine the flour, cornmeal, salt and pepper. In a pie plate, beat eggs and 2 tablespoons of milk, coat steaks with flour mixture, then dip in egg mixture, then dredge in flour mixture again. Let sit a couple of minutes.
- Over medium high heat, brown two of the cube steaks in 2 tablespoons of the oil for 5 to 7 minutes on each side or until lightly browned and crisp. Remove meat and keep warm in oven. Repeat with remaining oil and cube steaks.
- Gravy: Drain off all but 1 tablespoon of the pan drippings; whisk in the flour until well blended, cooking for 1 minute. Slowly add the milk; bring to a boil over medium heat, boil for 2 minutes, stirring constantly. Reduce heat to medium low, add bouillon, salt and pepper, then simmer, uncovered for 4 to 5 minutes. Serve over the fried steaks.
