Beef: Salsa Meatloaf

- 1 pound lean ground beef
- 1 pound bulk sausage
- 1/2 cup thick bottled salsa
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1/4 cup chopped green onion (green and white parts)
- 1/4 cup finely chopped shallots
- 1 to 2 cloves of garlic, minced
- 1 egg
- 2/3 cup dried seasoned bread crumbs
- 1 teaspoon seasoned salt
- 1/2 teaspoon pepper
- 1/2 teaspoon Mrs. Dash Original Season Blend
- 1 teaspoon chili powder (optional)
Instructions
- In a large bowl, combine everything; mix well but do not over handle the meat. Over handling will make a tough meatloaf. Shape into a loaf and place in a 9x13" casserole dish (not a loaf pan). Bake at 350 degrees for about an hour, or until a meat thermometer reads 165 degrees when inserted in the center. Let cool for 5 to 10 minutes before slicing and serving. Serve with additional salsa, if desired.
