Beef: Cabbage Meatloaf Patties

- 1 pound ground 90% lean turkey or beef
- 1/2 cup chopped onion
- 1 1/2 cups shredded cabbage
- 1 cup cold rice, cooked
- 1 (10 3/4 ounce) can Healthy Request Tomato Soup, divided
- 1/2 cup water
- 1 teaspoon dried parsley flakes
Instructions
- In a large bowl, combine meat, onion, cabbage, rice and 1/4 cup tomato soup. Mix well to combine.
- Using a 1/2 cup measure as a guide, form mixture into 6 patties. Place patties in a large skillet sprayed with butter flavored cooking spray. Brown patties for 6 to 8 minutes on each side.
- Stir water and parsley flakes into remaining soup. Evenly spoon soup mixture over patties. Continue cooking for 6 minutes or until meat is cooked through. When serving, evenly spoon sauce over top of patties.
- Hint: 2/3 cup uncooked rice usually cook to about 1 cup.
