    Beef: Cube Steaks With Salsa

    List of Ingredients


    • 4 cube steaks (about 5 ounces each)
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 tablespoon butter or margarine
    • Salsa:
    • 2 large tomatoes, chopped
    • 2 tablespoons chopped red onion
    • 3 tablespoons chopped celery
    • 3 tablespoons chopped green pepper
    • 2 tablespoons chopped green chile peppers
    • 1/2 teaspoon mustard seed
    • 1 tablespoon red wine vinegar
    • 1 tablespoon chopped cilantro or parsley
    • 1/2 teaspoon salt
    • Dash black pepper
    • 2 tablespoons oil
    • Sour cream, optional
    • Grated cheese, optional


    Instructions


    1. Start making the salsa. In a bowl, combine the tomatoes, onion, celery, green pepper, chile peppers, mustard seed, parsley or cilantro, vinegar, salt, and pepper. Stir in oil. Let salsa stand for a few minutes for flavors to blend.

    2. In a skillet, heat butter. Brown cube steaks in butter on both sides until brown. Reduce heat. Cook, uncovered for a few more minutes until cooked to your liking. Sprinkle with salt and pepper.

    3. Arrange steaks on hot serving plate. Spoon a little salsa over each steak. Serve remaining salsa alongside. Serve with sour cream, grated cheese and tortilla chips, if desired.
