Beef: Cube Steaks With Salsa

List of Ingredients
- 4 cube steaks (about 5 ounces each)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon butter or margarine
- Salsa:
- 2 large tomatoes, chopped
- 2 tablespoons chopped red onion
- 3 tablespoons chopped celery
- 3 tablespoons chopped green pepper
- 2 tablespoons chopped green chile peppers
- 1/2 teaspoon mustard seed
- 1 tablespoon red wine vinegar
- 1 tablespoon chopped cilantro or parsley
- 1/2 teaspoon salt
- Dash black pepper
- 2 tablespoons oil
- Sour cream, optional
- Grated cheese, optional
Instructions
- Start making the salsa. In a bowl, combine the tomatoes, onion, celery, green pepper, chile peppers, mustard seed, parsley or cilantro, vinegar, salt, and pepper. Stir in oil. Let salsa stand for a few minutes for flavors to blend.
- In a skillet, heat butter. Brown cube steaks in butter on both sides until brown. Reduce heat. Cook, uncovered for a few more minutes until cooked to your liking. Sprinkle with salt and pepper.
- Arrange steaks on hot serving plate. Spoon a little salsa over each steak. Serve remaining salsa alongside. Serve with sour cream, grated cheese and tortilla chips, if desired.
