Smoked Sausage: Fiesta Sausages

- Vegetable cooking spray
- 8 (6 inch) corn tortillas
- 1 (15 ounce) can chili (without beans)
- 1 1/2 cups grated monterey jack cheese, divided
- 1/3 cup chopped onions
- 2 pounds smoked sausage, cut into 8 (6 inch) pieces
- 1 (16 ounce) jar thick salsa
Instructions
- Spray a rectangular baking dish with cooking spray.
- To prevent tortillas from cracking during assembly, heat tortillas in microwave until soft.
- Lay tortillas on a flat surface and spread each tortilla with 1 heaping tablespoon of chili, next sprinkle each with 1 tablespoon cheese and 1 heaping teaspoon onions. Place one sausage link in center of each tortilla.
- Tightly roll up tortillas. Place with seam side down in prepared baking dish.
- Spread salsa evenly over tortillas, making sure all surfaces are covered. Spinkle remaining cheese evenly atop mixture.
- Bake in preheated 350 degree oven until cheese is melted and mixture is bubbly, about 25 minutes.
