List of Ingredients
- 3 tablespoons light brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons cider vinegar
- 1/4 teaspoon ground allspice
- 1/4 teaspoon black pepper
- 4 bone in lion pork chops (8 ounces each) about 1 inch thick
- 1/4 teaspoon salt
- 2 cups cooked white rice
- 1 cup cooked or canned black beans, rinsed and drained if canned
- 1/3 cup mild to medium tomato salsa
- 2 green onions, thinly sliced
Instructions
- In a shallow glass dish, combine brown sugar, soy sauce, vinegar, allspice and pepper. Add pork chops; turn to coat. Cover; chill, turning twice, for 1 hour.
- Preheat broiler. Remove chops from marinade. Sprinkle with salt and place on broiler pan. Broil chops 6 inches from heat, turning once, until cooked through but still juicy, about 12 minutes.
- While chops are cooking, in a medium bowl, combine the rice, black beans, salsa and green onions; toss gently to mix. Serve alongside the chops.
