Beef: Mexican Meatloaf

- 1 medium diced onion
- 2 pounds ground beef
- 1 minced garlic clove
- 1 (16 ounce) jar taco sauce
- 1 (10 ounce) can chicken with rice soup
- 1 can cream of mushroom soup
- 1 (4 ounce) can chopped green chiles
- 1(6 ounce) can tomato paste
- Salt and pepper, to taste
- Corn tortillas
- 1/2 pound grated cheddar cheese
Instructions
- Saute onions in one tablespoon cooking oil. Add ground beef and cook until brown. Drain off excess grease, then add taco sauce, garlic, both soups, green chiles, tomato paste, salt and pepper. Simmer for 15 minutes.
- Place 1/2 mixture in a large baking dish. Add a layer of tortillas, then add remainder of beef mixture. Top with layer of cheese. Cover and bake for 30 to 40 minutes at 350 degrees.
- Serves 10. This recipe can be frozen without the cheese. When ready to use, thaw. Add cheese and cook normally.
