Beef: Pepper Jack Meatloaf

• 1 egg
  
• 1 cup seasoned bread crumbs
  
• 1/4 cup onion, chopped
  
• Salt and pepper to taste
  
• 1 1/2 pounds ground beef
  
• 1 cup pepper jack cheese, divided
  






Instructions



1. Combine egg, bread crumbs, onion, salt and pepper.
   
   
2. Crumble beef over mixture and mix well.
   
   
3. Press half into bottom and half way up sides of loaf pan.
   
   
4. Sprinkle 3/4 cup cheese over meat, within 1/2" of sides.
   
   
5. Pat remaining beef mixture over cheese.
   
   
6. Bake, uncovered at 350 degrees for 50 to 55 minutes.
   
   
7. Sprinkle with remaining cheese.
   
   
8. Bake 5 minutes more.
   
   
9. Let stand 10 minutes before serving.
