    Beef: Skillet Steak And Corn

    List of Ingredients


    • 1 pound boneless round steak, cut into strips
    • 1 medium onion, cut into 1/4" wedges
    • 1/2 teaspoon dried thyme
    • 2 tablespoons vegetable oil
    • 3/4 cup red wine or beef broth
    • 1 (14 1/2 ounce) can diced tomatoes, undrained
    • 2 (11 ounce) cans mexicorn, drained
    • Hot cooked rice


    Instructions


    1. In a skillet or wok over medium high heat, brown steak, onion and thyme in oil.

    2. Add wine or broth; simmer for 10 minutes or until the liquid has evaporated.

    3. Stir in tomatoes; cover and simmer 15 minutes longer. Add the corn and heat through.

    4. Serve over rice.
