Smoked Sausage: Hearty Cassoulet

- Pam Original No Stick Cooking Spray
- 1 pound Eckrich Smoked Sausage, thinly sliced
- 12 ounces boneless, skinless chicken breasts, cut into 1 inch chunks
- 1 (15 ounce) can great northern beans
- 1 (15 ounce) can red kidney beans
- 1 (28 ounce) can Hunt's Diced Tomatoes in juice
- 2 tablespoons packed brown sugar
- 1 teaspoon garlic powder
- 1/2 teaspoon thyme
- 3/4 cup sliced green onions
Instructions
- Coat a 6 quart saucepan or dutch oven with cooking spray. Heat over medium high heat; add sausage and chicken. Cook for 7 to 10 minutes or until chicken is no longer pink. Add beans, tomatoes, brown sugar, garlic and thyme. Bring to a boil; reduce heat to low. Simmer for 15 minutes. Stir in onions.
