Smoked Sausage: Southwest Sausage Skillet Supper

- 1 tablespoon Wesson Pure Vegetable Oil
- 1 (16 ounce) package Eckrich Smoked Sausage Links, cut into 1 inch pieces
- 1 medium zucchini, halved lengthwise and sliced
- 1 medium onion, chopped (1/2 cup)
- 3 cups cooked rice
- 1 (14 1/2 ounce) can Hunt's Petite Diced Tomatoes with Mild Green Chiles, undrained
- 1 cup frozen whole kernel corn
- 2 teaspoons Gebhardt Chili Powder
- 1/2 teaspoon dried oregano leaves
- 1/4 teaspoon salt
- 1 cup shredded cheddar cheese
Instructions
- Heat oil in large skillet over medium heat. Add sausage, zucchini and onion; cook and stir 8 minutes. Stir in rice, tomatoes, corn, chili powder, oregano and salt. Cook over low heat 10 minutes, stirring occasionally. Remove from heat. Top with cheese; cover. Let stand 5 minutes, or until cheese is melted. Serve immediately.
