    Speedy Oven Meatballs

    List of Ingredients


    • 1 pound lean ground beef
    • 1/4 cup fine dry bread crumbs
    • 1 single serving package mushroom soup mix
    • 1/2 cup milk


    Instructions


    1. Preheat oven to 500 degrees. In a large bowl, combine beef, bread crumbs, soup mix and milk; shape mixture into 32 meatballs. Place in single layer in a large foil lined shallow baking pan. Bake 8 minutes or until cooked; drain. Add meatballs to one of the following sauces and serve hot with cooked rice or noodles.
    2. Curry Sauce: In a medium saucepan, melt 2 tablespoons butter. Blend in 2 tablespoons flour, 1 teaspoon curry powder and a pinch of ground ginger. Gradually stir in 3/4 cup light cream and 1/2 cup beef consomme. Cook and stir over medium heat until mixture boils and thickens. Yield: About 1 1/2 cups
    3. Cheese Sauce: In a medium saucepan, melt 2 tablespoons butter. Blend in 2 tablespoons flour and 3/4 teaspoon dry mustard. Gradually stir in 1 1/4 cups milk. Cook and stir over medium heat until mixture boils and thickens. Remove from heat; cool slightly. Add 1 1/2 cups shredded cheddar cheese and stir until cheese is melted. Yield: About 1 1/2 cups
    4. Mushroom Sauce: In a medium saucepan, combine 1 (10 3/4 ounce) can cream of mushroom soup and 2/3 cup milk. Add 1 (10 ounce) can drained, sliced mushrooms. Cook and stir over medium heat until hot. Yield: About 2 1/2 cups
    5. Tips: To quickly shape uniform meatballs, place meat mixture on cutting board; pat evenly into a large square, 1 inch thick. With a sharp knife, cut meat into 32 squares; shape each square into a ball with wet hands.
