    Ham: Vegetable Ham Hash

    • 1 tablespoon oil
    • 2 cups diced ham
    • 2 tablespoons minced onion
    • 1 small package frozen mixed vegetables
    • 1 cup diced frozen hash browns


    Instructions


    1. Heat oil; brown ham and onion in heavy skillet. Add 1/2 cup boiling water and vegetables; cover. Bring to a boil. Reduce heat. Simmer until vegetables are just tender, about 6 to 10 minutes. Do not overcook vegetables.

    2. Yield: 4 servings
