Ham: Vegetable Ham Hash

- 1 tablespoon oil
- 2 cups diced ham
- 2 tablespoons minced onion
- 1 small package frozen mixed vegetables
- 1 cup diced frozen hash browns
Instructions
- Heat oil; brown ham and onion in heavy skillet. Add 1/2 cup boiling water and vegetables; cover. Bring to a boil. Reduce heat. Simmer until vegetables are just tender, about 6 to 10 minutes. Do not overcook vegetables.
- Yield: 4 servings
