    Mexicana Shrimp and Vegetable Kabobs

    List of Ingredients


    • 2 tablespoons lemon juice (juice from one lemon)
    • 2 tablespoons olive oil
    • 2 teaspoons McCormick Chili Powder
    • 1/2 teaspoon McCormick Ground Cumin
    • 1/2 teaspoon McCormick Garlic Powder
    • 1/2 teaspoon McCormick Oregano Leaves
    • 1/4 teaspoon salt
    • 1 pound large shrimp, peeled and deveined
    • 5 cups assorted vegetables such as zucchini, onions, mushrooms, bell pepper, cut into 1 inch pieces


    Instructions


    1. Combine marinade ingredients in a glass bowl or self closing plastic bag. Add shrimp and toss to coat. Skewer the shrimp alternately with the vegetables. Refrigerate 15 minutes. Broil or grill kabobs 7 to 8 minutes, turning frequently, or until the shrimp are cooked through and vegetables are tender.
    2. Yield: 4 servings (205 calories each)
