Pistachio Fudge

- 1 pound white chocolate
- 1 (8 ounce) package cream cheese
- 3 cups confectioners' sugar
- 1/2 teaspoon McCormick Pure Vanilla Extract
- 1/4 teaspoon McCormick Pure Almond Extract
- 1/8 teaspoon McCormick Green Food Color
- 1/2 cup chopped pistachios
- Additional pistachios for garnish, optional
Instructions
- Line an 8 inch square pan with foil, allowing foil to extend over sides of pan. Spray with nonstick cooking spray. Melt chocolate in microwave or double boiler.
- Combine cream cheese and sugar on low speed of electric mixer; then beat at medium speed until smooth. Add melted chocolate, extracts, and food color; mix well. Stir in pistachios. Press into prepared pan.
- Refrigerate at least one hour, or until firm, then cut into small squares. Store in the refrigerator.
- Tip: Substitute 1 bag (12 ounces) white baking pieces for the white chocolate if desired.
