Rolled Enchiladas

List of Ingredients
- 2 pounds ground beef
- 1/2 cup chopped onion
- 1 envelope taco seasoning mix
- 1/2 cup water
- 1 (16 ounce) can refried beans
- 12 soft corn tortillas
- 1 (8 ounce) can tomato sauce
- 1 (8 ounce) container taco sauce
- 2 cups shredded cheddar cheese (see note)
- 4 cups shredded lettuce
- 1 large tomato, chopped
- 1 cup shredded cheddar cheese
Instructions
- Brown ground beef in skillet, stirring until crumbly; drain well.
- Add onion. taco seasoning mix, water and refried beans; mix well.
- Simmer for 5 minutes, stirring occasionally.
- Spoon onto tortillas; roll each to enclose filling.
- Place seam side down, in a greased 9x13" baking dish.
- Mix tomato and taco sauce in bowl. Spoon over the tortillas.
- Sprinkle with 2 cups cheese.
- Microwave on High for 10 minutes or until heated thru.
- Sprinkle with lettuce, tomato and cheese.
- Serves 6
Final Comments
NOTES: I like to use a combination of Cheddar, Colby or Longhorn and Monteray Jack cheese. Also the taco sauce can be mild or hot, whichever is preferred.
