    Smothered Mexican Pork Chops

    List of Ingredients


    • 1 tablespoon vegetable oil
    • 4 boneless thin cut pork chops (about 3/4 pound)
    • 1 can (14 1/2 ounces) chunky tomatoes, salsa or Cajun style
    • 1 can (16 ounces) black beans, drained
    • 2 cups Birds Eye frozen Farm Fresh Mixtures Broccoli, Corn and Red Peppers
    • Or, substitute 2 cups Birds Eye frozen Corn.


    Instructions


    1. Heat oil in large skillet over high heat. Add pork; cook until browned, about 4 minutes per side.
    2. Add tomatoes; reduce heat to medium. Cover and cook 5 minutes. Uncover and push pork to side of skillet.
    3. Add beans and vegetables. Place pork on top of vegetables. Increase heat to medium high; cover and cook 5 minutes or until heated through.
    4. Makes about 4 servings
