Smothered Mexican Pork Chops

List of Ingredients
- 1 tablespoon vegetable oil
- 4 boneless thin cut pork chops (about 3/4 pound)
- 1 can (14 1/2 ounces) chunky tomatoes, salsa or Cajun style
- 1 can (16 ounces) black beans, drained
- 2 cups Birds Eye frozen Farm Fresh Mixtures Broccoli, Corn and Red Peppers
- Or, substitute 2 cups Birds Eye frozen Corn.
Instructions
- Heat oil in large skillet over high heat. Add pork; cook until browned, about 4 minutes per side.
- Add tomatoes; reduce heat to medium. Cover and cook 5 minutes. Uncover and push pork to side of skillet.
- Add beans and vegetables. Place pork on top of vegetables. Increase heat to medium high; cover and cook 5 minutes or until heated through.
- Makes about 4 servings
