Ham And Broccoli Fettuccine

- 8 ounces uncooked dried fettuccine
- 1/2 cup butter or margarine
- 2 cups fresh broccoli florets
- 1/2 cup fresh mushrooms
- 1/2 teaspoon finely chopped garlic
- 1/4 cup chopped fresh parsley
- 1 cup whipping cream
- 1/4 teaspoon pepper
- 3/4 cup freshly grated parmesan cheese
- 6 ounces cubed left over ham
Instructions
- Cook fettuccine in a dutch oven according to package directions. Drain and set aside. In the same pan, melt margarine. Add broccoli, mushrooms and garlic; cook over medium heat, stirring occasionally, until broccoli is crispy tender (4 to 5 minutes). Stir in parsley, cream and pepper. Continue cooking, stirring occasionally, until heated through (4 to 5 minutes). Stir in fettuccine, 3/4 cup parmesan cheese and ham. Continue cooking, stirring occasionally, until heated through and cheese is melted (4 to 6 minutes). Serve with additional parmesan cheese.
