Lasagna Roll Ups

- 12 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- 1 egg
- 1 tablespoon dried parsley
- 8 ounces sweet Italian sausage, casings removed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) jar marinara sauce, divided
Instructions
- Preheat oven to 375 degrees. Grease a 13x9 inch baking dish. Cook lasagna noodles according to package directions; drain and rinse.
- In a medium bowl, mix ricotta, 1 cup mozzarella, egg and parsley. Set aside.
- In a large skillet, cook sausage, onion and garlic over medium heat, until sausage is browned and crumbly, about 10 minutes. Drain fat. Set mixture aside.
- Spread 1/2 cup marinara sauce in prepared baking dish. Place noodles on a work surface. Spread 3 tablespoons cheese mixture over each noodle; top with some sausage mixture. Roll up each noodle and arrange in baking dish.
- Pour remaining sauce over roll-ups; sprinkle with remaining mozzarella. Bake, loosely covered with foil, for 15 minutes. Uncover; bake until bubbly, about 10 minutes longer.
