Linda's Lasagna Rolls

List of Ingredients
- 1 pound bulk Italian sausage
- 8 lasagna noodles, cooked
- 1 small onion, chopped
- 2 cups homemade spaghetti sauce, or as much as you like
- 4 large egg yolks, beaten
- 6 teaspoons water or dry red wine
- 1 cup cream style cottage cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Brown sausage with onion in a skillet until done; drain. Stir in beaten egg yolks, cream style cottage cheese and parmesan cheese.
- Spread each lasagna noodle with 1/8 of the mixture. Roll up jelly roll style, starting at short edge. Place seam side down in a small greased baking dish. Sprinkle with salt and pepper.
- Stir together the spaghetti sauce and water or dry red wine. Pour on top of the lasagna rolls in the baking dish. Bake in a 350 degree oven for 25 to 35 minutes, or until the lasagna rolls are heated through.
- Take out of oven and sprinkle shredded mozzarella cheese on top. Cook another 5 minutes to melt cheese.
