Mozzarella Pasta Salad

- 8 ounces uncooked fusilli or other spiral pasta
- 1 tablespoon balsamic vinegar or more to taste
- 2 teaspoons olive oil
- 1/2 teaspoon dried oregano
- 1 cup cherry or grape tomatoes halved
- 1/2 cup basil fresh chopped
- 1/2 cup shredded part skim mozzarella cheese
- 1/8 teaspoon salt or to taste
- 1/8 teaspoon pepper or to taste
Instructions
- Cook pasta according to package directions, without added salt or fat. Drain and transfer to a large bowl.
- Add vinegar, oil and oregano; toss to coat.
- Fold in tomatoes, oil, basil and mozzarella; season to taste with salt and pepper.
- Serve warm or chilled.
- Yields about 1 cup per serving.
- 6 servings at 5 points each.
