Vanilla Cream Filling For Puff Eclaires

- 3 cups milk
- 1/2 cup flour
- 3/4 cup sugar
- 1/4 teaspoon salt
- 3 eggs
- 1 1/2 teaspoons vanilla
- 3/4 cup heavy cream, whipped
Instructions
- Scald milk and add to mixture of flour, sugar and salt. Cook over hot water in double broiler until thick, stirring constantly. Cover and cook for 5 minutes. Pour mixture slowly into beaten eggs. Return to double boiler and cook 2 minutes, stirring briskly. Add vanilla and whipped heavy cream. Chill. If shells are not to be filled immediately. add whipped heavy cream just before filling. Makes enough filling for 12 shells.
