    Vanilla Cream Filling For Puff Eclaires

    List of Ingredients


    • 3 cups milk
    • 1/2 cup flour
    • 3/4 cup sugar
    • 1/4 teaspoon salt
    • 3 eggs
    • 1 1/2 teaspoons vanilla
    • 3/4 cup heavy cream, whipped


    Instructions


    1. Scald milk and add to mixture of flour, sugar and salt. Cook over hot water in double broiler until thick, stirring constantly. Cover and cook for 5 minutes. Pour mixture slowly into beaten eggs. Return to double boiler and cook 2 minutes, stirring briskly. Add vanilla and whipped heavy cream. Chill. If shells are not to be filled immediately. add whipped heavy cream just before filling. Makes enough filling for 12 shells.
