    Baked Sour Cream Chicken

    • 8 boneless skinless chicken breasts
    • 1 (10 3/4 ounce) can cream of chicken soup (Campbells, not low fat or low sodium)
    • 1 cup light sour cream
    • 1/2 cup mayonnaise (light or regular, but not fat free)
    • 1 cup plus 1/2 cup grated sharp cheddar cheese
    • 1 tablespoon onion powder
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon poultry seasoning
    • Pepper, to taste


    Instructions


    1. Preheat oven to 350 degrees. Trim all visible fat and tendons from chicken breasts, then cut each piece in thirds diagonally. Spray a 9x12 inch glass casserole dish with nonstick cooking spray and arrange chicken pieces in a single layer. Combine all other ingredients except the 1/2 cup of cheese and pour over chicken. Bake 45 minutes, stirring slightly halfway through cooking time. Top with 1/2 cup reserved cheese and bake 15 to 20 minutes more, until cheese is melted and top is slightly browned.
