    • 1 broiler/fryer chicken, cut in parts
    • 1/2 cup buttermilk
    • 1/2 cup packaged corn flake crumbs
    • 1/2 cup flour
    • 1 teaspoon salt
    • 1 teaspoon poultry seasoning
    • 4 tablespoons butter


    Instructions


    1. Remove skin from chicken and discard. Dip chicken parts in buttermilk. In a shallow dish, mix together corn flake crumbs, flour, salt and poultry seasoning; add chicken, one piece at a time, dredging to coat. Arrange chicken in a single layer in well buttered dish. Drizzle melted butter over chicken. Place in preheated 375 degree oven and bake 45 minutes or until a fork can be inserted in chicken with ease.
    2. Yield: 4 servings
