    Buttermilk Oven Fried Chicken

    List of Ingredients


    • 4 boneless, skinless chicken breasts
    • 1 cup buttermilk
    • 1 teaspoon of each: basil, thyme and oregano
    • 1/4 teaspoon pepper
    • 1 cup bread crumbs
    • 1 tablespoon old bay seasoning
    • 2 tablespoons chopped fresh parsley, divided
    • 1/2 teaspoon salt
    • Parsley leaves


    Instructions


    1. In baking dish combine chicken, buttermilk, basil, thyme, oregano, pepper, turn chicken to coat. Cover, refrigerate for 2 hours. Preheat oven to 350 degrees. Coat jellyroll pan with cooking spray. In bowl combine breadcrumbs, Old Bay, 1 tablespoon parsley and salt. Remove chicken from buttermilk mixture. Coat each chicken piece in crumb mixture. Arrange chicken on pan. Coat chicken with cooking spray. Bake 30 minutes Sprinkle with parsley leaves. Makes 8 pieces.
