Chicken Scampi

- 1/2 cup butter
- 1/4 cup olive oil
- 1/4 cup finely chopped onion
- 1 tablespoon minced garlic
- Juice of 1 lemon (about 3 tablespoons)
- 2 pounds boneless, skinless chicken breast, cut into 1/2" pieces
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup minced fresh parsley
- 2 medium chopped tomatoes
- Buttered noodles or rice
Instructions
- In a large skillet, heat butter and oil.
- Saute onions and garlic.
- Add lemon juice, chicken, salt, pepper and parsley.
- Cook, stirring constantly for 5 to 8 minutes or until chicken is cooked through.
- Add tomatoes and heat through.
- Serve over noodles or rice.
- Serves 4 to 6
