    List of Ingredients


    • 1/2 cup butter
    • 1/4 cup olive oil
    • 1/4 cup finely chopped onion
    • 1 tablespoon minced garlic
    • Juice of 1 lemon (about 3 tablespoons)
    • 2 pounds boneless, skinless chicken breast, cut into 1/2" pieces
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/4 cup minced fresh parsley
    • 2 medium chopped tomatoes
    • Buttered noodles or rice


    Instructions


    1. In a large skillet, heat butter and oil.
    2. Saute onions and garlic.
    3. Add lemon juice, chicken, salt, pepper and parsley.
    4. Cook, stirring constantly for 5 to 8 minutes or until chicken is cooked through.
    5. Add tomatoes and heat through.
    6. Serve over noodles or rice.
    7. Serves 4 to 6
