    List of Ingredients


    • 1/2 cup fine dry bread crumbs
    • 1/4 cup freshly grated parmesan cheese
    • 1/4 teaspoon Italian seasoning
    • 1/4 teaspoon basil
    • Salt and freshly ground black pepper
    • 1 egg
    • 2 tablespoons water
    • 6 boneless, skinless chicken breasts
    • 2 tablespoons butter
    • 2 tablespoons oil


    Instructions


    1. Combine bread crumbs, parmesan cheese and spices in a bowl.
    2. In another bowl, beat egg and water together.
    3. Dip one piece of chicken in the egg and then in the bread crumb mixture to coat on both sides.
    4. Remove to a plate.
    5. Continue with all the chicken pieces.
    6. Heat the oil and butter together in a large frying pan over medium high heat.
    7. Add chicken in a single layer.
    8. Do it in batches if it will not all fit in your pan.
    9. Cook until golden brown on both sides, about 7 to 8 minutes.
    10. Remove to a serving platter.
    11. Makes 6 servings.
