Creamed Chicken With Biscuits

- Biscuits:
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2/3 cup milk
- 1/3 cup vegetable oil
- Creamed Chicken:
- 1/4 cup chopped onion
- 1/4 cup butter or margarine
- 1/4 cup flour
- 1/4 to 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups milk or broth
- 2 cups chopped cooked chicken
- Parsley
Instructions
- Biscuits: Combine flour, baking powder and salt; add milk and oil. Stir until dough forms a ball. Knead 10 times. Roll or pat into a 6" square about 1" thick. Cut into 6 rectangles. Place on lightly greased pan. Bake at 450 degrees for 10 to 12 minutes.
- Creamed Chicken: In a skillet, saute onions in butter until tender. Stir in flour, salt and pepper until smooth. Add milk, bring to a boil. Reduce heat and stir 1 to 2 minutes until thick. Stir in chicken and parsley; heat.
- To serve, split biscuit in half. Put some creamed chicken over top of bottom half. Top with top of biscuit and more creamed chicken.
