    • 8 ounces uncooked no yolk egg noodles
    • 4 cups water
    • 1 pound boneless skinless chicken breast
    • 1 1/2 cups chopped onion
    • 3/4 cup chopped celery
    • 1/2 teaspoon dried thyme
    • 1 bay leaf
    • 1/8 teaspoon white pepper
    • 1 can cream of chicken soup
    • 1/2 cup fat free buttermilk


    Instructions


    1. Cook noodles according to package directions. Omitting salt. Drain; set aside.
    2. Meanwhile, bring water to a boil in a dutch oven or large saucepan. Add the next 6 ingredients.
    3. Return to a boil.
    4. Reduce heat; simmer, uncovered 35 minutes.
    5. Remove chicken. Cut in 1/2" pieces; set aside.
    6. Increase heat to high. Return liquid in dutch oven to a boil.
    7. Continue cooking until liquid and vegetables have been reduced to 1 cup.
    8. Remove from heat; discard bay leaf.
    9. Whisk in soup and buttermilk until well blended.
    10. Add chicken pieces and noodles; toss to blend.
    11. Sprinkle with parsley, if desired.
    12. Makes 4 servings at 411 calories each.
