- 1 tablespoon margarine
- 1 1/4 cups Hungry Jack Instant Potato Flakes
- 1/2 cup grated parmesan cheese
- 1/4 teaspoon salt
- Black pepper, to taste
- 4 boneless, skinless chicken breast halves
- 2 eggs, beaten
Instructions
- Preheat oven to 425 degrees.
- Melt margarine in a baking dish.
- Combine potato flakes, parmesan cheese, salt and pepper.
- Dip chicken in beaten egg, roll in potato flake mixture and place in prepared baking dish.
- Bake 50 minutes or until done.
- Serves 4
