Lemon Basil Chicken And Rice

- 4 small boneless skinless chicken breasts
- 1 teaspoon garlic powder
- 1/2 teaspoon lemon pepper
- 1/2 teaspoon dried basil
- 1/2 teaspoon butter or margarine
- 1 1/2 cups water
- 2 cups sliced mushrooms
- 1 teaspoon lemon juice
- 1 teaspoon lemon peel
- 1 cup uncooked rice
Instructions
- Combine garlic powder, lemon pepper and dried basil and sprinkle over chicken breasts.
- Melt margarine in a large nonstick skillet over medium heat.
- Add chicken breasts and brown on both sides.
- Remove chicken from skillet and keep warm.
- Add water, mushrooms, lemon juice, lemon peel and rice. Bring to a boil.
- Return chicken to the skillet, cover and simmer 15 to 20 minutes or until all liquid is absorbed.
- Makes 4 servings at 311 calories each.
