    Lemon Basil Chicken And Rice

    • 4 small boneless skinless chicken breasts
    • 1 teaspoon garlic powder
    • 1/2 teaspoon lemon pepper
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon butter or margarine
    • 1 1/2 cups water
    • 2 cups sliced mushrooms
    • 1 teaspoon lemon juice
    • 1 teaspoon lemon peel
    • 1 cup uncooked rice


    Instructions


    1. Combine garlic powder, lemon pepper and dried basil and sprinkle over chicken breasts.
    2. Melt margarine in a large nonstick skillet over medium heat.
    3. Add chicken breasts and brown on both sides.
    4. Remove chicken from skillet and keep warm.
    5. Add water, mushrooms, lemon juice, lemon peel and rice. Bring to a boil.
    6. Return chicken to the skillet, cover and simmer 15 to 20 minutes or until all liquid is absorbed.
    7. Makes 4 servings at 311 calories each.
