    Peanut Butter Chicken

    • 1 pound chicken breast fillets
    • 2 tablespoons reduced fat peanut butter
    • 1 teaspoon low sodium soy sauce
    • 2 tablespoons water (if you'd like a thinner sauce add 1 to 2 tablespoons more water)
    • 1 teaspoon sesame seeds


    Instructions


    1. Preheat oven to 350 degrees. Coat a baking pan with olive oil cooking spray. Season chicken lightly with salt and pepper and place in baking dish; set aside.
    2. Combine peanut butter, soy sauce and water in bowl and stir until smooth and well mixed (or microwave on high 30 seconds). Spoon mixture over the chicken, then sprinkle with sesame seeds.
    3. Bake for 20 to 30 minutes or until the chicken is no longer pink inside.
    4. Makes 4 servings at 141 calories each
