    Pepper Jack Skillet Fajitas

    List of Ingredients


    • 1 tablespoon canola oil
    • 1 pound boneless, skinless chicken breast, cut into strips
    • 1 large green pepper, cut into 2 inch long strips
    • 1 large onion, sliced
    • 1 (10 3/4 ounce) can southwest style pepper jack soup
    • 8 fat free flour tortillas, warmed


    Instructions


    1. Heat oil in skillet. Add chicken and cook until browned.
    2. Add pepper and onion and cook over medium heat until tender. Add soup and heat through.
    3. Spoon about 1/2 cup of chicken mixture down the center of each tortilla. Fold tortilla around filling.
    4. Makes 8 fajitas.
