Pepper Jack Skillet Fajitas

- 1 tablespoon canola oil
- 1 pound boneless, skinless chicken breast, cut into strips
- 1 large green pepper, cut into 2 inch long strips
- 1 large onion, sliced
- 1 (10 3/4 ounce) can southwest style pepper jack soup
- 8 fat free flour tortillas, warmed
Instructions
- Heat oil in skillet. Add chicken and cook until browned.
- Add pepper and onion and cook over medium heat until tender. Add soup and heat through.
- Spoon about 1/2 cup of chicken mixture down the center of each tortilla. Fold tortilla around filling.
- Makes 8 fajitas.
