Pineapple Chicken Stir Fry

List of Ingredients
- 1/4 cup lite soy sauce
- 2 tablespoons sugar
- 1 tablespoon cider vinegar
- 1 tablespoon ketchup
- 1/2 teaspoon ground ginger
- 2 garlic cloves minced
- 1 pound boneless skinless chicken breast cut into strips
- 2 tablespoons vegetable oil
- 1 (16 ounce) package frozen stir fry vegetables
- 1 (16 ounce) can unsweetened pineapple chunks drained
Instructions
- In a small bowl, combine the first 6 ingredients; set aside.
- In a large skillet or wok, stir fry chicken in oil for 5 to 6 minutes until juices run clear.
- Add vegetables and stir fry 3 to 4 minutes until tender-crisp.
- Stir in pineapple and soy sauce mix.
- Heat through.
- Serve over hot cooked rice.
