    Pineapple Chicken Stir Fry

    List of Ingredients


    • 1/4 cup lite soy sauce
    • 2 tablespoons sugar
    • 1 tablespoon cider vinegar
    • 1 tablespoon ketchup
    • 1/2 teaspoon ground ginger
    • 2 garlic cloves minced
    • 1 pound boneless skinless chicken breast cut into strips
    • 2 tablespoons vegetable oil
    • 1 (16 ounce) package frozen stir fry vegetables
    • 1 (16 ounce) can unsweetened pineapple chunks drained


    Instructions


    1. In a small bowl, combine the first 6 ingredients; set aside.
    2. In a large skillet or wok, stir fry chicken in oil for 5 to 6 minutes until juices run clear.
    3. Add vegetables and stir fry 3 to 4 minutes until tender-crisp.
    4. Stir in pineapple and soy sauce mix.
    5. Heat through.
    6. Serve over hot cooked rice.
    7. Yields 6 servings at 5 points each.
