    Potato Coated Oven Fried Chicken

    List of Ingredients


    • 1 whole cut up chicken or boneless, skinless chicken breasts
    • Seasoned salt
    • White pepper
    • Garlic powder
    • 2 to 3 egg whites or equivalent egg substitute, slightly beaten or until frothy
    • 1 1/2 cups dry mashed potato flakes
    • 1/2 cup butter or margarine


    Instructions


    1. Heat oven to 350 degrees.
    2. Sprinkle chicken liberally with seasoned salt, pepper and a little garlic powder, then rub in.
    3. Dip each piece into beaten egg whites, then coat with mashed potato flakes.
    4. Melt butter or margarine in shallow baking pan; arrange chicken pieces in single layer.
    5. Bake in preheated oven for 30 minutes.
    6. Turn pieces and continue baking another 45 minutes, or until pieces are tender.
