Potato Coated Oven Fried Chicken

List of Ingredients
- 1 whole cut up chicken or boneless, skinless chicken breasts
- Seasoned salt
- White pepper
- Garlic powder
- 2 to 3 egg whites or equivalent egg substitute, slightly beaten or until frothy
- 1 1/2 cups dry mashed potato flakes
- 1/2 cup butter or margarine
Instructions
- Heat oven to 350 degrees.
- Sprinkle chicken liberally with seasoned salt, pepper and a little garlic powder, then rub in.
- Dip each piece into beaten egg whites, then coat with mashed potato flakes.
- Melt butter or margarine in shallow baking pan; arrange chicken pieces in single layer.
- Bake in preheated oven for 30 minutes.
- Turn pieces and continue baking another 45 minutes, or until pieces are tender.
