- 1 (1 1/4 ounce) package taco seasoning
- 1 pound boneless, skinless chicken breasts, cut into strips
- 2 tablespoons oil
- 1 (14 1/2) ounce can diced tomatoes
- 1/3 cup apricot or peach preserves
Instructions
- Empty Taco Seasoning on a plate or into a plastic bag. Add chicken strips and toss to coat.
- Heat oil over medium heat in a large skillet. Add chicken and sauté 5 to 7 minutes or until done.
- Stir in tomatoes and preserves. Cover and simmer 10 minutes.
