    Simple Chicken Stir Fry

    • 1 pound boneless skinless chicken breast, cut into strips
    • 4 cups frozen stir fry vegetables, without sauce
    • 1/2 cup chicken broth
    • 1/4 cup light teriyaki sauce
    • salt and pepper to taste


    Instructions


    1. Spray large nonstick skillet with cooking spray and heat.
    2. Add chicken and cook over medium heat, stirring constantly until browned.
    3. Add vegetables; stir fry until barely tender , 2 to 3 minutes.
    4. Add broth, teriyaki sauce, salt and pepper, stir fry until chicken is cooked through and vegetables are tender-crisp about 3 minutes longer.
    5. Makes 4 servings, 3 points per serving, serve over cooked rice (1 cup of rice has 4 points).
