    List of Ingredients


    • 1 large onion, chopped
    • 1 tablespoon butter or margarine
    • 1 1/2 cups chicken broth
    • 1 cup salsa
    • 1 cup uncooked long grain white rice
    • 1/8 teaspoon garlic powder
    • 4 boneless, skinless chicken breast halves
    • 3/4 cup cheddar cheese
    • Parsley or cilantro, chopped


    Instructions


    1. In a large skillet, saute onion in butter until tender.
    2. Add chicken broth and salsa and bring to a boil.
    3. Stir in rice and garlic powder.
    4. Place chicken over rice.
    5. Cover and simmer for 10 minutes.
    6. Turn chicken over and cook an additional 10 to 15 minutes or until meat juices run clear.
    7. Remove from heat.
    8. Sprinkle with cheese; cover and let stand for 6 minutes.
    9. Garnish with parsley or cilantro, if desired.
