    Southwestern Chicken Stir Fry

    • 2 tablespoons lime juice
    • 2 teaspoons chili powder
    • 1 pound boneless skinless chicken breast halves cut into 1/2" strips
    • 2 tablespoons vegetable oil
    • 1 small zucchini thinly sliced
    • 1 small yellow summer squash thinly sliced
    • 1/3 cup picante sauce or salsa
    • 2 tablespoons cilantro freshly chopped


    Instructions


    1. Mix lime juice and chili powder in a medium glass or plastic bowl.
    2. Stir in chicken until well coated. Cover and refrigerate 15 minutes.
    3. Heat 1 tablespoon of the oil in a 12" skillet over high heat.
    4. Add chicken mixture; stir fry 5 to 6 minutes or until chicken is no longer pink in the center. Remove chicken from skillet.
    5. Add remaining 1 tablespoon oil to skillet. Add zucchini and yellow squash; stir fry 4 minutes or until vegetables are tender-crisp.
    6. Stir in chicken, picante sauce and cilantro; cook until hot.
    7. Yields 4 servings.
