    List of Ingredients


    • 4 boneless skinless chicken breasts
    • 2 packages lipton spanish rice mix
    • 1 can mild enchilada sauce
    • water
    • shredded cheddar cheese


    Instructions


    1. Preheat oven to 350 degrees.
    2. Spray a 13x9" glass pan with cooking spray.
    3. Empty both packages of lipton spanish rice mix into pan, dry.
    4. Pour water over rice, until the water level is just to the top of the rice.
    5. Place chicken breasts on top.
    6. Pour enchilada sauce over chicken.
    7. Cover and bake for 45 minutes.
    8. Uncover and sprinkle with cheese.
    9. Put back in oven until cheese is melted.
