Spanish Chicken

List of Ingredients
- 4 boneless skinless chicken breasts
- 2 packages lipton spanish rice mix
- 1 can mild enchilada sauce
- water
- shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees.
- Spray a 13x9" glass pan with cooking spray.
- Empty both packages of lipton spanish rice mix into pan, dry.
- Pour water over rice, until the water level is just to the top of the rice.
- Place chicken breasts on top.
- Pour enchilada sauce over chicken.
- Cover and bake for 45 minutes.
- Uncover and sprinkle with cheese.
- Put back in oven until cheese is melted.
