Chili Oven Fried Chicken

- 4 boneless skinless chicken breast halves (about 1 1/4 pounds total)
- 1 cup low fat buttermilk
- 1 tablespoon honey
- 1/2 cup flour
- 2 tablespoons yellow cornmeal
- 1 tablespoon chili powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ceyenne pepper
- 1 tablespoon vegetable oil
Instructions
- Preheat oven to 400.
- Spray baking sheet with nonstick cooking spray.
- In a medium bowl, stir together buttermilk and honey; add chicken and let stand 5 minutes.
- On a plate, combine flour, cornmeal, chili powder, oregano, salt and ceyenne.
- Dredge chicken chicken in flour mixture, shaking off excess.
- Place chicken on prepared baking sheet, drizzle with oil and bake 12 minutes, or until crisp, golden and cooked through.
- Makes 4 servings at 302 calories each.
