    Chili Oven Fried Chicken

    List of Ingredients


    • 4 boneless skinless chicken breast halves (about 1 1/4 pounds total)
    • 1 cup low fat buttermilk
    • 1 tablespoon honey
    • 1/2 cup flour
    • 2 tablespoons yellow cornmeal
    • 1 tablespoon chili powder
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon ceyenne pepper
    • 1 tablespoon vegetable oil


    Instructions


    1. Preheat oven to 400.

    2. Spray baking sheet with nonstick cooking spray.

    3. In a medium bowl, stir together buttermilk and honey; add chicken and let stand 5 minutes.

    4. On a plate, combine flour, cornmeal, chili powder, oregano, salt and ceyenne.

    5. Dredge chicken chicken in flour mixture, shaking off excess.

    6. Place chicken on prepared baking sheet, drizzle with oil and bake 12 minutes, or until crisp, golden and cooked through.

    7. Makes 4 servings at 302 calories each.
