Pressure Cooker Apple Sauce

Recipe Introduction
All you do is bring the apples to high pressure and turn it off immediately. You can use any apple you like (just not Red Delicious, which are best for eating and make a mealy sauce), but the recipe is probably best with a combination. For example, sweet Golden Delicious apples match well with tart Pippins or Empires. Or try juicy Jonathan apples with sweet MacIntosh. The final flavor varies according to the apples used, so be flexible. You may have to simmer the sauce a few minutes to reduce excess liquid and intensify the apple flavor.
List of Ingredients
- 6 medium apples, peeled, cored and cut into 1/4 inch thick wedges (2 1/2 pounds total)
- 1/2 cup water
- 1/2 cup sugar
- 1/8 teaspoon ground cinnamon
- One (4 inch) strip lemon zest
Instructions
- In a 5 to 7 quart pressure cooker, combine the apples, water, sugar, cinnamon and lemon zest. Lock the lid in place. Bring to high pressure over high heat. Immediately remove from the heat and quick release the pressure. Open the lid, tilting it away from you to block any escaping steam. Discard lemon zest. Stir well to break up the apples.
Return pot to a boil. Cook until applesause has thickened.
