    Pressure Cooker Rice Pilaf With Veggies

    List of Ingredients


    • 3 cups long grain white rice
    • 1/2 teaspoon salt
    • 3 cups chicken broth or water
    • 1 cup frozen chopped vegetables
    • 1 onion, chopped
    • 1 teaspoon cumin
    • 1/2 green bell pepper, diced
    • 1 tablespoon vegetable oil
    • 1/2 cup mushrooms, sliced


    Instructions


    1. Heat oil and saute onion and mushrooms for 1 minute. Add rice, green pepper, cumin, salt and saute for 2 to 3 minutes, stirring constantly, until rice browns. Add chicken broth and stir. Add frozen vegetables. Cover the pressure cooker and bring up to full pressure. Reduce heat and cook for 3 minutes. Cool naturally for 5 minutes. Open, let stand for 5 minutes without the cover. Stir gently.
