Baked Rice

- 1/2 cup chicken broth
- 1/4 cup uncooked long grain rice
- 1 teaspoon fresh minced parsley
- Salt and pepper to taste
- 1/4 cup shredded cheddar or swiss cheese
Instructions
- In a greased 12 ounce baking dish, combine chicken broth, rice, parsley salt and pepper. Cover and bake at 340 degrees for 30 to 35 minutes or until rice is tender. Sprinkle with cheese; bake 4 minutes longer or until cheese is melted.
- Yields 1 serving.
