Fried Rice

List of Ingredients
- 4 cups cooked rice, cold
- 1/4 cup green onions thinly sliced
- 1/2 cup frozen peas
- 1/4 cup carrots, minced
- 1/2 teaspoon ginger
- 1/2 teaspoon garlic powder
- 1/4 cup eggbeaters
- 2 tablespoons low sodium soy sauce
- 1/2 teaspoon sugar
Instructions
- Spray a wok or skillet with cooking spray. Add the onions, peas and carrots. Cook stirring until tender crisp. Add the rice and heat. Make a hole in the center of rice mixture. Add the eggbeaters and fry in the hole until set.
- Chop up the eggs and mix the eggs into the rice mixture. Mix the soy sauce, seasonings and sugar and add to rice mixture and stir until well mixed.
- Makes 8 1/2 cup servings, 2 points each.
