    List of Ingredients


    • 3/4 cup shredded carrot
    • 1/2 cup frozen peas, thawed
    • 1/2 cup chopped onion
    • 2 cloves garlic, minced
    • 2 tablespoons margarine or butter
    • 1 (12 ounce) jar thick and chunky salsa
    • 1 cup water
    • 1 cup regular long grain rice


    Instructions


    1. Cook carrot, peas, onion and garlic in margarine or butter in medium saucepan over medium high heat for 5 minutes or until onion is tender. Stir in salsa and water. Heat to a boil; stir in rice. Cover; bring to a boil. Reduce heat to low; simmer for 25 to 30 minutes or until liquid is absorbed and rice is tender.
