List of Ingredients
- 2 cups white rice
- 4 cups water
- 1 cup mayonnaise (low fat/fat free ok)
- 1 small red onion, chopped
- 1/2 red bell pepper, seeded and chopped
- 1/2 green bell pepper, seeded and chopped
- 3/4 cup picante sauce or salsa
- 1/2 cup grated cheddar cheese (low fat/fat free ok)
Instructions
- Cook rice according to package directions.
- In a bowl, combine mayonnaise, onion, peppers, picante sauce or salsa, and cheddar cheese.
- When rice is cooked add mayonnaise mixture and heat through.
